Honestly, there seems to be so much post rock coming out of Texas these days, I'm not sure what to do with it anymore.
First you had Explosions in the Sky, and there is My Education, By The End of Tonight, Oceanographic, now I'm looking at This Will Destroy You
Don't get me wrong, I like a good post rock band to fill time on my show so I can go to the bathroom, jog down to the chinese place pick up some grub, take a shower and get back in time for the next song, but why the fascination Texas? Why?
Also, 30 years later, indie kids haven't changed 
I think I have that guy's shirt and that guy's beard....

Its usually instrumental music that mixes rock with music for movie scores, and usually has a ton of crescendos or builds.
Some really good, semi-popular examples are Godspeed! You Black Emperor; A Silver Mount Zion; Mogwai; Explosions in the Sky; and Mono (from Japan).
I suggest checking out the Godspeed album "Lift Your Skinny Little Fists Like Antennaes to Heaven", the Mono album "Walking Cloud", and either of the Explosions in the Sky stuff.
